Stay Cozy, Stewed Apples

I’ve made it twice this week, had leftovers each time and ate it throughout the week. Such a cozy feel good moment that I wanted to share. We just finished apple season here so we’ve had an abundance of apples but even if it’s off season you can grab some apples from the store and whip this up. It felt so nourishing and leveled me off in a way that I desperately needed - allowing a flow of feel good activity to ensue. I didn’t measure or use an exact recipe but I’m listing below general ideas. I encourage you to use what you have on hand. Today when I made it I threw in some freeze dried strawberries I had in the cabinet that were delicious. I’ve also heard just apples and water cooked is a good replacement for morning coffee - I haven’t tried that yet - had this after my morning coffee…..

Apple Comfort in a bowl

  • 2 ea large apples, cubed

  • 2 cups water

  • 2 tblsp raw cacao nibs

  • 1 tsp cinnamon

  • 1/2 cup nuts, chopped (I did pecans one day and pumpkin seeds the next)

  • 1/2 cup quick cook steel cut oats (or rolled or even an oatmeal packet)

  • 8 ea dates, chopped

  • 1 tblsp pumpkin protein powder (optional)

  • 1 tblsp wild blueberry powder (optional)

  • hemp seed, sesame seed etc are fun too

    Combine all ingredients together in a pot. Cook over medium heat about 10 minutes. Turn down flame and cook over low heat another 10 minutes, stirring regularly. Put a lid on and let sit about 5 minutes.

    I scooped some into a bowl, poured a bit of hemp milk over, fresh berries and sesame seeds.
