Naked Pea Cookies

These are easy and delicious! A new use for your protein powder & kids love them.

The Naked Pea protein powder I use in this recipe is perfect. It can be hard to find a protein powder that doesn’t have any extra ingredients and this one fits the bill. No sweeteners, no soy, no anything besides what you’re after - the protein boost. It’s only ingredient is yellow pea protein isolate! You can combine it with anything and make it your own. This recipe has 54 grams of protein just from the Naked Pea powder alone! Add in the extra bonus you’re getting from the peanut butter, hemp milk and pecans and you have yourself one powerhouse of a cookie that’s not chalky or weird - that actually tastes great and feels like a treat.

Naked Pea Cookies

Yield: varies depending on size - I did a purple scoop I have that’s 1 tblsp and got about 40

They keep well so don’t worry about extra. You can put them in an airtight container and throw the excess in your freezer to pull out whenever you want a sweet treat!

·      4 Ounces / ½ Cup Peanut Butter

·      1oz / 2 Tablespoons Olive Oil

·      1 Cup Sugar, you can use coconut sugar, evaporated cane juice etc

·      ½ Cup Hemp Milk (or any milk substitute)

·      2 Teaspoons Vanilla Extract

·      ¼ Teaspoon Almond Extract

·      6 drops Lemon Oil, Essential Oil

·      1 cup Flour, All Purpose

·      ½ Teaspoon Baking Soda

·      ½ Teaspoon Salt

·      1 Cup Oats, Rolled

·      ½ Cup Chocolate Chips, I use Enjoy Life mini vegan ones : https://rb.gy/klot1u

·      ½ Cup Pecans, chopped

·      1 Teaspoon Ginger, powdered

·      1 Teaspoon Cinnamon, powdered

·      ½ Cup Naked Pea Protein, find it here!

Combine all ingredients together well. I use a kitchen aid with the paddle attachment.

Scoop onto cookie sheet and bake until done, about 10-12 minutes. An easy way to check for ‘doneness’ is to flip a cookie over to check out how it looks on the bottom. This is a good indicator!

If you want a flat cookie wet hands and push dough down before baking. I use a scoop and leave them as balls but they’re good both ways! See images above for reference!
