Granola

Hello everyone! I’ve been making a lot of granola lately and wanted to share an easy recipe. It’s great as a snack or breakfast with yogurt & milk! I currently have three kinds for sale on my website: Chocolate Nut, Cranberry White Chocolate & Seeded.

Improvise with what you have on hand and add what you like! One word of advice - if you’re adding dried fruit (raisins, cranberries etc) fold them in AFTER it’s out of the oven!
Also, you can easily cut this recipe in half. I make big batches - it has a long shelf life - keep in sealed containers. Some people like to keep it in the freezer but I’ve never had an issue keeping it at room temperature - 6/8 months is probably the longest it’s ever stuck around!

Granola

  • 4 pounds Oats, whole, rolled

  • 2.5 cups Oil, Olive (you can use a combination of oils - sunflower, hemp etc)

  • 2.5 cups Maple Syrup / Honey (you can choose what you like / have!)

  • t Tablespoon Vanilla Extract

  • 1 Tablespoon Cinnamon, ground

  • 1/3 cup Flax Seed

  • 1.5 cups Nuts (whatever you like / have!) or no Nuts if you don’t like them!

  • 1 cup Dried fruit, if desired

Oven at 325

Oats, flax, nuts in a bowl - mix. Oil, syrup / honey, vanilla, cinnamon in a pot - medium flame - whisk to a boil. Pour over oat mixture and mix well. Put on sprayed sheet pans - spread out - put in oven. Depending on your oven it will bake about 45 minutes. Take trays out - mix and turn trays a couple of times - using a large metal spoon or spatula toss the sides into the middle for an even bake. All ovens bake unevenly so turning the trays around and changing their shelf placement helps! Fold in dried fruit if using once out of oven - gently mix in on sheet pan and then let cool.
